Angela's Make Ahead Mashed Potatoes
This is a different recipe than I have found on this sight. It is my favorite for family get togethers.

Ingredients
- 5 pounds potatoes ( I have used red and left the skin on for a more rustic look)
- 6 ounces cream cheese
- 1 cup sour cream
- 4 Tbs chopped parsley
- 2 tsp onion diced small
- 1 tsp salt
- 2 Tbs butter
- 4 cloves of garlic minced

Preparation
Step 1
Cook potatoes in boiling salt water and drained. Peel or not:) Mash until smooth. Add remaining ingredients and beat until light and fluffy. Cool.
Cover and place in refrigerator.
May be used anytime within one week. When ready to use, place desired amount in greased casserole. Dot with butter and bake 350 degrees for 30 minutes.
