Ingredients

  • 7 med tomatoes, quartered
  • 1 large onion cut into large pieces (about 1 1/2 inch)
  • 3 garlic cloves, peeled
  • 2 tbs olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 5 cups chicken or vegetable broth
  • 2 (15.5 oz) cans black beans, drained and rinsed
  • 1 1/2 tsp ground cumin
  • 1 tsp chili powder
  • 1/4 tsp tabasco
  • 1/4 cup sour cream
  • 1/4 c chopped cilantro

Preparation

Step 1

Oven 375 Toss tomatoes with the oil, onion, and salt, & pepper
Bake about 30--45 minutes
Add mix to 4 qt saucepan. Add broth, beans, cumin, chili power and salt and pepper. Bring to boil, reduce to simmer for 10 minutes.

Removed from heat, blend till smooth, add hot sauce.
finish with sour cream and cilantro at serving.
