Frijoles Rancheros

Ingredients

  • 3 strips bacon, diced
  • 1 cup diced onions
  • 1 poblano chile, seeded and diced
  • 1 Tbsp. olive oil
  • 1 can each pinto beans and black beans, drained and rinsed (15–16 oz. each)
  • 1 ⁄2 cup low-sodium chicken broth
  • 3 cloves garlic, minced
  • 1 Tbsp. chili powder
  • Salt and fresh cilantro leaves

Preparation

Step 1

Cook bacon in a sauté pan until crisp; drain on a paper-towel-lined plate.

Sauté onions and poblano with oil in sauté pan over medium heat until onion softens, 5 minutes. Add bacon, beans, broth, garlic, and chili powder; cover pan. Reduce heat; simmer beans for 5 minutes.

Uncover and simmer beans until most of the liquid evaporates. Season with salt; top with cilantro.
