Ingredients
- 3 strips bacon, diced
- 1 cup diced onions
- 1 poblano chile, seeded and diced
- 1 Tbsp. olive oil
- 1 can each pinto beans and black beans, drained and rinsed (15–16 oz. each)
- 1 ⁄2 cup low-sodium chicken broth
- 3 cloves garlic, minced
- 1 Tbsp. chili powder
- Salt and fresh cilantro leaves

Preparation
Step 1
Cook bacon in a sauté pan until crisp; drain on a paper-towel-lined plate.
Sauté onions and poblano with oil in sauté pan over medium heat until onion softens, 5 minutes. Add bacon, beans, broth, garlic, and chili powder; cover pan. Reduce heat; simmer beans for 5 minutes.
Uncover and simmer beans until most of the liquid evaporates. Season with salt; top with cilantro.
