Ingredients

  • 1 cup (2 sticks) butter softened
  • 1 cup sugar
  • 2 eggs
  • 3 tsp. vanilla extract
  • 2 & 1/2 cups of flour
  • 1/2 tsp. baking powder
  • A dash of salt
  • 2 tsp. lemon zest

Preparation

Step 1

Beat butter, sugar, eggs & vanilla until well blended.
Whisk together flour, baking powder, salt & lemon zest.
Add flour mixture to butter mixture and mix until well blended.
Divide dough in half and chill until firm (1-2 hours).
Heat oven to 400 degrees
Roll out dough with rolling pin on well floured surface. Use your favorite cookie cutter to make fun and festive shapes. Top with colored sugar, sprinkles, M & M’s, chips etc.
Bake on cookie sheet lined with parchment paper. Remove from oven when cookies are lightly golden in color (do not overcook, these can burn easily). Cool on rack and enjoy!
