  • 1/4 * 1/4 cup Honey
  • 2 * 2 cups Firmly frozen vanilla ice cream
  • 2 * 2 tablespoons Almond butter
  • Honey-Roasted Figs
  • 8 * 8 Large figs (preferably a mix of green and black)
  • 1/2 * 1/2 cup Honey
  • 4 * 4 Sprigs fresh thyme (preferably lemon thyme)

Almond Praline Ice Cream

1. In a hot skillet over medium heat, toast the almonds while stirring frequently. Add the honey. Continue cooking while stirring until the honey caramelizes and colours slightly. Pour onto the cookie sheet, spreading the mixture in a thin layer. Transfer the cookie sheet to the freezer and leave until the praline hardens, 15 to 30 minutes. Break the praline into pieces. Store 8 small shards on parchment paper in the refrigerator or freezer until use.
2. In a food processor, pulse the ice cream and almond butter until smooth. Working quickly, add the praline pieces and pulse briefly until the almonds are chopped finely or to your liking. Transfer to a container. Seal tightly and freeze until firm, about 2 hours.

Honey-Roasted Figs

1. Line a cookie sheet with parchment paper.
2. With the rack in the middle position, preheat the oven to 180°C (350°F).
3. Using a knife, cut a cross in the stem end of each fig. Stand the figs in a 20-cm (8-inch) square Pyrex dish. Add 4 thyme sprigs. Drizzle the figs with honey. Roast until the figs swell and partially open like a flower, about 20 minutes. Baste the figs with the cooking juices several times while roasting.
4. Set out 8 square white plates. On each plate, place 1 fig and 1 scoop almond praline ice cream. Drizzle with honey. Garnish with a praline shard and thyme leaves.
