Ingredients
- 3 lbs chicken pieces
- 3 tbsp minced garlic
- 2 tbsp minced onions
- 2 tbsp vinegar
- 1 cup water
- 1 bay leaf (optional)
- 1 tbsp crushed black peppercorn
- 1 tbsp salt
- 3 tbsp oil
- 1 t tablespoon sugar (white)
- 2 tbsp soy sauce
- 1/4 cup cream, (optional)
Preparation
Step 1
In a pot, saute garlic, onions and chicken, cook until chicken is tender. add bay leaf, peppercorns, soy sauce, vinegar, simmer for 10mins. Add water, bring to a boil and then simmer again for about 20 minutes without stirring. Remove any impurities that float up to the top of the stew.
Season with salt and sugar, simmer for another 10 minutes. The flesh of the chicken should be very tender.
Allow the stock to reduce until about ¾ cup of stock is left. Add the cream only at the end of cooking. Serve with plain rice and a fried vegetable or a green salad.
