Greek Mushroom Dish

This cold mushroom dish delivers delicious and complex flavors yet is extremely simple to make so it's a real pleaser for everyone.

Ingredients
- 2 cups small mushrooms
- 1 onion
- 1 tbsp Tomato concentrate / paste
- 1 bouquet of herbs (parsley, bay leaf, thyme)
- 1 cloves garlic
- 6 tbsp oil
- 1 lemon (juice from)
- 2 tbsp raisins
- 1 glass white wine
- 1 tbsp coriander
- salt and pepper to taste
- feta cheese (optional)
Preparation
Step 1
Wash and scrub the mushrooms to remove all the dirt and cut them into bite-sized pieces
Heat the oil in a saucepan, when it's ready, saute the chopped onion until it begins to brown.
Add white wine, herbs, tomato, raisins and pepper, coriander and lemon juice.
Cook over high flame, covering sucepan for 5 minutes.
Uncover the saucepan and add the mushrooms. Simmer for another 5-7 minute, stirring every now and then.
Add salt, stit again, and place all ingredients in a salad bowl. Place in fridge for 3 hours before serving.
When ready to serve, add a few cubs of feta cheese or parmesan.
