Ingredients

  • 1 cup quick oat rolled oats
  • 1 cup plain fat free yogurt
  • 2 cups shredded peeled apples
  • 2 eggs
  • 1/4 cup fat free milk
  • 2 tbsp canola oil
  • 1 tsp vanilla
  • 3/4 cup whole wheat flour
  • 3/4 cup flour
  • 2/3 cup firmly packed brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 3/4 cup chopped dried apricots or dried cherries/cranberries

Preparation

Step 1

Preheat oven to 375 degrees. Combine oats and yogurt in a medium bowl and let stand for 5 to 10 minutes. Whisk together the apple, eggs, milk, oil and vanilla in a separate bowl. Add the apple mixture to the yogurt mixture and stir to blend. In a large bowl sift dry ingredients, and pour yogurt mixture over dry ingredients and sprinkle with dried fruit. Stir until combined. Spoon into muffin cups (lined on outside by parchment paper for great presentation) and bake for 35 minutes until tops are brown.
