Is anyone else ready for autumn? It's been a long hot summer and I'm ready for a chill in the air. And with that, a big bowl of soup is the best meal when the weather finally does cool down. Here in Atlanta, that might be awhile and I wasn't willing to wait that long. So this afternoon I mixed up a big pot of soup and named it, "Hell on Wheels Chuckwagon Soup."

Why you ask? Well even if you're not into westerns, you must watch the show on AMC just to get an eyeful of handsome bad boy, Anson Mount. He plays Cullen Bohannon, a former Confederate soldier who works as a foreman on the building of the transcontinental railroad.

Hell on Wheels Chuckwagon Soup 1 Picture

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup onion, chopped
  • 1 package Hamburger Helper Beef Pasta
  • 5 cups water
  • 1 bay leaf
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (16 ounce) can diced tomatoes
  • 1 (10 ounce) package frozen mixed vegetables of your choice
  • 8 ounces wagon wheel pasta

Preparation

Step 1

1. Cook and stir ground beef and onion in a large pan until beef is brown.
2. Stir in sauce mix from Hamburger Helper package. Add water, bay leaf, salt, pepper and tomatoes. Heat to boiling, stirring constantly. Reduce heat; cover and simmer, stirring occasionally for 10 minutes.
3. Stir in frozen vegetables and noodles from Hamburger Helper package and the wagon wheel pasta; cover and cook about 10 minutes longer. Remove bay leaf and serve.
