Ingredients
- Flan:
- 2 cups heavy cream
- 1 cup milk
- 1 vanilla bean pod
- pinch salt
- 4 egg yolks
- 3 eggs
- 1/2 cup sugar
- Caramel:
- 1 cup sugar
- 1/3 cup water
Preparation
Step 1
Preheat oven to 350 degrees.
Set ramekins in baking dishes.
Step 1:
Mix cream and milk. Split vanilla bean and scrape seeds into cream/milk mixture.
Add in pod and salt.
Heat over low heat until mixture boils,
remove from heat, and let steep for 30 minutes.
Step 2: Make the caramel.
Combine 1/3 cup water with 1 cup sugar.
Bring to a boil over medium heat, swirling, not stirring, until sugar is dissolved and mixture is clear. Watch very carefully and keep swirling until mixture becomes a nice amber color.
Remove from heat and immediately pour into ramekins, swirling the ramekins to coat the sides. Work fast.
Step 3:
Whisk the whole eggs and yolks.
Whisk in the 1/2 cup sugar.
Whisk in the cream mixture.
Pour into ramekins.
Pour water halfway up the sides of the ramekins.
Place in 350 degree oven and bake for 40 minutes.
Remove from oven, let sit 5-10 minutes,
run a knife around outside, and invert onto serving platter while still warm.
Refrigerate.
