Turkey Wild Rice Soup

A rich, creamy turkey soup, this version features the nuttiness of wild rice. And it’s topped with chopped bacon and green onions. Did you hear that? Bacon!

Ingredients

  • 3 (10.5-ounce) cans condensed chicken broth
  • 1/2 cup uncooked wild rice
  • 1/2 cup green onions, finely chopped, divided
  • 1/2 cup butter
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon poultry seasoning
  • 2 cups half and half
  • 1 1/2 cups chicken or turkey, cooked, cubed
  • 8 slices bacon, browned and crumbled, divided
  • 1 tablespoon pimiento, chopped

Preparation

Step 1

Simmer chicken broth, wild rice and onions (reserve some onion for garnish) for 40 minutes or until rice is tender.

In a separate pan, melt the butter and add flour, salt, pepper and poultry seasoning. Cook until smooth, stirring constantly. Gradually stir in half and half cooking until slightly thickened.

Slowly add into rice mixture with turkey, bacon and pimiento, reserving some bacon for garnish. Heat gently and stir frequently, but not boil.

Garnish each serving with additional green onion and bacon.
