Ingredients
- 1 onions, chopped
- 1/2 T. olive oil
- 3 c. chicken broth
- 3 15-1/2 oz. cans Great Northern beans, drained and rinsed
- 1 cup diced chicken, drained
- 1 4-oz. cans diced green chiles
- 1 t. ground cumin
- 1/2 t. garlic powder
- 3/4 t. dried oregano
- pinch of white pepper
- 6-oz. sour cream
- 1 1/2 c. shredded Monterey Jack cheese
Preparation
Step 1
In a large stockpot over medium heat, sauté onions in oil until tender. Stir in remaining ingredients except sour cream and cheese. Simmer for 30 minutes, stirring frequently, until heated through. Shortly before serving, add sour cream and cheese. Stir until cheese is melted. Serves 8 to 10.
