  • Peppers, any variety from bell peppers to hot! Roaste red bell peppers are an awesome addition to spaghetti sauce.

Preparation

Step 1

For oven:
1. Cut stems off peppers then cut in half and lay flat on a lined pan.
2. Roast under broiler until peppers begin to char. Monitor carefully.
3. Place peppers in a bowl and cover. Let sit for 15 minutes. Peppers will steam causing skin to further separate from the flesh.
4. Slip off skins, trim away membranes and seeds, then cut in strips or dice.

For grill:
1. Place whole pepper on prepared hot grill.
2. Grill the peppers, turning a quarter turn until fully diced.
Continue with step 3 above.

To freeze:
1. Place the strips or dice on a single layer on a lined baking sheet and place in freezer.
2. Once completely frozen, place in a freezer bag and return to freezer until ready to use.
