Step 1

I cut the cauliflower in small pieces, add some water and microwave it for 5 minutes, then drain it.
To make sauce, melt 1/4 cup butter in a pan, add 1/4 cup flour ( I mostly use rice flour now) and let it cook for a minute without burning, keep it stirred. Then add 2 cups milk and 1 cup grated cheese. You can add season salt and Italian seasoning. When the sauce is cooked and thick, pour over drained cauliflower, sometimes I sprinkle with bacon bits and cook in oven for 3/4 hr at 350 degrees.
