- 2 large or 4 small whole-grain tortilla(s)
- 1/2 cup cooked black beans
- 4 tablespoons medium salsa
- 4 eggs

Possible Toppings:
Sliced avocado
Chopped parsley
Chopped cilantro
1. Heat tortilla(s) in oven until soft (about 5 minutes).
2. Warm black beans and salsa in a skillet.
3. Move beans and salsa to one side of skillet. Crack eggs into other side of skillet and cook 3-5 minutes to desired firmness.
4. Place tortilla(s) on a plate and top with eggs, beans and salsa.
5. Garnish with your choice of toppings.
