Ingredients

  • 1 ~1/4 cups all purpose flour
  • 3 tablespoons brown sugar
  • 1/2 cup butter (no substitutes)
  • 2 eggs
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup light-colored corn syrup
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla

Preparation

Step 1

1. For crust, in a small mixing bowl combine flour and the 3 tablespoons brown sugar. Using a pastry blender, cut in the 1/2 cup butter till mixture resembles coarse crumbles. Pat mixture into an ungreased 11 x 7 x1 1/2 inch baking pan. Bake in a 375 degree oven for 20 minutes.

2. Meanwhile, using a fork beat eggs in a small mixing bowl. Stir in the 1/2 cup brown sugar, pecans, corn syrup, melted butter and vanilla. Pour on top of hot crust, spreading evenly. Bake in the 375 degree oven for 15 to 20 minutes more till center appears set. Cool slightly in pan on wire rack, cut into bars. Cook in pan on wire rack. Cover bars and store in refrigerator. Makes 24.
