Delish! Especially good with beef. Can be made in oven or microwave! If you can't find the small new potatoes, use red potatoes and cut into wedges or thick slices.

Ingredients

  • 1/4 cup butter
  • 1/2 teaspoon salt (or to taste)
  • 1/8 teaspoon pepper
  • 1 tablespoon prepared horseradish
  • 2 teaspoons lemon juice
  • 12 red potatoes, unpeeled except for 1/2 inch strip around center of each potato (1-1/2 pounds)
  • 1 small lemon, cut into 6 sliced, halved
  • 2 tablespoons chopped fresh parsley

Step 1

Directions:

1 Heat oven to 350º.

2 In 2 quart casserole melt butter in oven 3-4 minutes.

3 Stir in salt, pepper, horseradish and lemon juice.

4 Stir in potatoes until well coated.

5 Cover; bake for 55-65 minutes or until potatoes are fork tender.

6 Garnish with lemon slices and sprinkle with parsley.

7 MICROWAVE: In 2 quart casserole melt butter on HIGH 50 to 60 seconds.

8 Stir in salt, pepper, horseradish and lemon juice.

9 Stir in potatoes.

10 Cover; Microwave on HIGH, stirring after half the time, until potatoes are fork tender (10-12 minutes).

11 Let stand 5 minutes.

12 Garnish with lemon slices and sprinkle with parsley.
