Ingredients

  • 2 lbs ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with garlic
  • 1/3 cup water
  • 1 t chili powder
  • 1/2 t cumin
  • 1/2 t salt
  • 1/4 t pepper
  • 1 cup shredded sharp cheddar
  • 1 cup shredded Monterey Jack cheese
  • flour tortillas

Preparation

Step 1

Brown ground beef and drain. Add all ingredients except cheese and tortillas; bring to boil. Reduce heat, cover and simmer for 10 minutes. In separate bowl, cominbe cheeses. In crockpot, layer 3/4 cup beef mixture, one tortilla and 1/3 cup of cheese. Repeat layers. Cook on low for 5-6 hours.
