KJ's Pico de Gallo

A favorite using fresh produce from the farmers market in our area. This is summer produce at its finest.

Ingredients
- 5 tomatoes, chopped
- 5 roma tomatoes, chopped
- 3 sweet chili peppers or Anaheim peppers, stemmed, seeded, and chopped
- 4 tomatillos, chopped
- 4 cloves garlic, chopped
- 1 red or yellow onion, chopped
- 4 jalapenos, stemmed, seeded, and chopped
- 1 lime, juiced
- 1/2 cup cilantro leaves chopped
- Salt
- Pepper
- If you prefer a little less heat, reduce jalapeno's to two. More heat, add a hot Thai chili pepper or Serrano pepper.

Tip, when chopping the regular tomatoes layer out several paper towels spread tomatoes on paper towels to drain some extra water & seeds from the tomatoes. Dump into mixing bowl
Combine all remaining ingredients except salt and pepper in a large glass bowl.
Toss and mix well. Season, to taste, with salt and pepper. Continue to mix for a few more minutes. Gets better after it sits about 20 - 30 minutes. give a final toss and serve.
Serve with your favorite chips. We like the whole wheat Tostito scoops.
Store refrigerated.
