Ingredients

  • 2 cups flour
  • 1 1/4 cups sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 cups carrotts, grated
  • 1 cup raisins
  • 1 cup pecans, chopped
  • 1/2 cup sweetened shredded coconut
  • 1 apple, peeled, cored and grated
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 tsp. vanilla

Preparation

Step 1

In a bowl sift together flour sugar, baking soda, cinnamon
Stir in grated carrots, raisins, pecans, coconut and apple. In a bowl beat eggs and vegetable oil and vanilla. Stir mixture into flour mixture until the batter is just combined. Spoon the batter into paper lined muffin pans, filling them to the top.

Bake muffins in preheated 350 oven for 30-35 minutes, or until they are springy to the touch. Let the muffins cool in the pans on a rack for 5 minutes. Turn out onto a rack and let cool completely.

Makes about 15 muffins.
