Tuna Burger

Ingredients

  • 1 t minced garlic
  • 1 T sesame oil
  • 1 T soy sauce
  • 1/4 t crushed red pepper flakes
  • 1 lg egg
  • 2 scallions, thinly sliced on a bias
  • 1/2 c panko
  • 1 1/4 # sushi grade ahi tuna
  • s & p to taste

Preparation

Step 1

Add first 5 ingredients to a bowl and mix well

Fold in tuna and scallions

Add s & p, fold in panko to bind the mixture

Form 4 five (5) oz patties and refrigerate for 15 - 20 min

Heat skillet or grill over med-high heat - lightly coat with grill/pan with oil to prevent sticking.

Cook patties 3 min a side. Brush with soy-sake glaze (see recipe) after turning. When done brush other side with glaze.

To serve: brush burgers with glaze laced with Srirracha. Coat bottom of bun with Srirracha mayo (1/2 c mayo, 1 T srirracha). Top burgers with lettuce and tomato.
