Bundt Coffee Cake

Ingredients

  • 1 box yellow cake mix (18.25 oz.)
  • 2 boxes vanilla instant pudding (3.4 oz. each)
  • 4 eggs
  • 1 C. vegetable oil
  • 1 C. water
  • 1 C. brown sugar
  • 3/4 C. pecans or walnuts, chopped
  • 1 Tbls. cinnamon

Preparation

Step 1

In a bowl, beat cake mix, pudding, eggs, oil & water with electric mixer 4-5 minutes. In a separate bowl, mix together the brown sugar, nuts & cinnamon.

Pour 1/2 the cake mix into a greased Bundt pan. Sprinkle 1/2 sugar mix over the cake mix, swirl into batter with knife. Add the other 1/2 cake mix, top with the other 1/2 sugar mix and swirl gain.

Bake in a preheated 350 degree oven for 60 minutes, or until a toothpick inserted into cake comes out clean. Let cool and then invert onto a plate.
