Walnut Zucchini Muffins

The shredded zucchini in these Walnut Zucchini Muffins adds a tenderness and the walnuts adds a nice crunch to these delicious muffins. Perfect served warm for a quick and easy breakfast or snack.

Ingredients
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 2/3 cup brown sugar, packed
- 2 teaspoons baking powder
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 eggs
- 3/4 cup milk
- 1/2 cup butter, melted
- 1 cup zucchini, shredded
- 1 cup walnuts, chopped
- 1/2 cup raisins
Preparation
Step 1
In a large bowl, combine the first six ingredients.
In another bowl, whisk the eggs, milk and butter; stir into dry ingredients just until moistened. Fold in the zucchini, walnuts and raisins.
Fill greased muffin cups three-fourths full. Bake at 375°F for 18 to 20 minutes or until a toothpick inserted near the center comes out clean.
Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
