Pork/Turkey madeira

Ingredients

  • 500 g pork/turkey
  • sunflower oil
  • 40 g butter
  • 1 onion finely chopped
  • 1/2 tbsp smoked paprika
  • 1 large tbsp flour
  • 1/2 pint chicken stock
  • 5 tbsp madeirs/sweet sherry
  • 1 tbsp tomato puree
  • sliced button mushrooms
  • 1/2 pint creme fraiche

Preparation

Step 1

Cut pork/turkey into 1/2 inch pieces. Brown in oil on both sides. Remove from pan with a slotted spoon and keep warm.

Add butter to pan and fry onion until tender. Add flour and paprika and cook for 1 minute. Gradually blend in stock and stir until thick. Season.

Stir in madeira, tomato puree and mushrooms - simmer.

Just before serving add creme fraiche.
