Easy peasy delicious casserole. You can double or triple this recipe and freeze some for a later meal. Freezes well unbaked or baked.

Ingredients

  • 2 cups small shell pasta, cooked and drained
  • 3 cups frozen mixed vegetables, cooked and drained
  • 2 cups cheddar, shredded divided
  • 1 can French fried onions, divided
  • 2 cups cooked chicken, shredded (can use canned chicken or rotisserie )
  • 1 can cream of chicken soup
  • 1/4 cup milk
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Preparation

Step 1

Preheat oven to 350 degrees.

Combine everything in a large bowl, reserving half of the cheese and half of the onions for topping later. Spoon into 9x13 casserole dish. Bake for twenty five minutes. Top with remaining onions and cheese, bake until cheese is melted, about five minutes more.

If freezing I put mine in a 9X12 disposable foil pan, wrapped well.

If uncooked frozen: you can refrigerate the night before to thaw or cook from frozen...from frozen: put in oven before preheating your oven, then preheat and cook as directed, adding about 10 to 15 minutes to cook time.

If precooked frozen: refrigerate night before then warm in oven to desired temperature, or take from freezer, put in cold oven then cook as directed, but check after about 30 minutes to see if heated through yet.
