Chocolate Chip Cookie Ice-Cream Sandwiches

Ingredients
- 1-1/4 cups all purpose flour
- 1/2 tsp baking soda
- 1-1/4 cups semi-sweet chocolate chips
- 1/2 cup butter, at room temperature
- 3/4 cup packed golden brown sugar
- 1 tsp pure vanilla extract
- 2 large eggs
- 10 to 12 scoops (1/2 to 3/4 cup) of chocolate, vanilla or other ice cream softened at room temperature a few minutes.

Place an oven rack in the middle position. Preheat the oven to 325 degrees. Line 2 large baking sheets with parchment paper.
Place the flour and baking soda in a bowl and whisk to combine. Stir in the chocolate chips.
In another bowl, beat the butter, sugar and vanilla until well combined and lightened. Beat in the eggs, one at a time. Add the flour mixture and mix until just combined.
Drop 2 tbsp amounts of the dough on the baking sheets, spacing them about 3 inches apart. (You should bget 20 to 24 cookies, depending on how evenly sized your pieces of cookie dough were.)
Bake the cookies, one sheet at a time, for 15 minutes, until light golden and cooked through. Cool cookies to room temperature.
To make ice-cream sandwiches, set a cookie on a work surface, smooth side up. Set a scoop of ice cream on that cookie. Set another cookie on top of the ice cream, smooth side down. Gently press cookies together to form a sandwich. Set ice-cream sandwiches on a baking sheet and set in the freezer.
Repeat with remaining cookies and ice cream. Whe the ice cream has become completely forzen again, individually wrap each ice-cream sandwich and keep frozen until needed.
