Garlic and Herb Pinwheels

This light and flavorful side dish is a wonderful addition to any pasta meal or served as an appetizer.

- 1 sheet of puff pastry, thawed
- 2 cloves of garlic, minced
- Fresh parsley
- Fresh chives
- Fresh oregano
- Fresh basil
- Fresh mint
- 2 Tbsp Extra Virgin Olive Oil
- Salt
- Pepper

Step 1
Preheat the oven to 400 degrees Fahrenheit. Chop a mixture of the fresh herbs to make 1/3 - 1/2 cup of mixed fresh herbs. In a small bowl, mix together the fresh herbs, garlic, and olive oil; Season with salt and pepper. On a lightly floured surface, unfold the puff pastry. Spread the herb mixture on the pastry to cover. Roll up the pastry dough and cut into 1/2" thick rounds with a sharp knife. Line a baking sheet with parchment paper and arrange the rounds on the parchment paper. Bake until the the pinwheels are puffed and golden on the edges, about 15 minutes. Allow the pinwheels to cool on a wire rack for about 10 minutes. Store in an airtight container for up to 3 days.
