Ingredients

  • 8 ounces Linguine pasta (preferably whole wheat)
  • 3/4 pound tomatoes, finely chopped
  • 1 clove garlic, pressed
  • 1/2 cup chopped red bell pepper
  • 1/2 bunch fresh basil, torn
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • Black pepper, to taste
  • Grated Parmesan cheese

Preparation

Step 1

Cook pasta according to package directions; drain. Meanwhile, in a large bowl, combine tomatoes, garlic, bell pepper and basil; drizzle with oil and sprinkle with salt and pepper; blend well. Toss hot pasta with tomato mixture and garnish with Parmesan cheese.

SERVING SUGGESTION: A big salad tossed with Easy Balsamic Vinaigrette (see recipe). Add garlic toast.
GLUTEN FREE: Make sure pasta is gluten free.
