Avocado Cream Sauce

Ingredients
- 2 avocados, peeled & sliced
- 2/3 cup sour cream
- 1 cup milk
- 1/2 medium sweet yellow onion, chopped
- 1/2 cup silver (clear) tequila
- 2 cloves garlic, pressed
- 2 tsp salt
- 1/4 cup fresh cilantro
- 1 tsp hot sauce
- juice from one medium lime, or 2 smaller limes
- 1-2 tbsp EVOO

Preparation
Step 1
In a small pot over medium-high heat drizzle EVOO and add in the onion and garlic. Stir constantly until the onion is translucent.
Next add in silver tequila. Continue cooking over medium-high heat until the liquid is reduced by 75%. You want to make sure all of the alcohol has been cooked off.
Now add in the fresh cilantro whole - stems and all. Add in milk, sour cream, hot sauce and lime juice. Cook over the heat stirring with a whisk constantly – this will make the sauce begin to thicken. After about 10-15 minutes or so, remove from the heat.
Add avocados, lime juice and cilantro mixture to blender. Blend well.
