Ingredients
- 6 cups water
- 1/4 cup kosher salt
- 1/4 cup red wine vinegar
- 1 cup fresh basil, chopped
- 1/4 cup fresh oregano, chopped
- 1 tablespoon packed brown sugar
- 6 cloves garlic, minced
- 1/2 teaspoon crushed red pepper
- Desired meat or poultry
- Purchased basil pesto

Preparation
Step 1
In a large bowl, combine the water, salt, vinegar, basil, oregano, brown sugar, garlic and crushed red pepper. Stir until salt and sugar are dissolved.
Place desired meat in a resealable plastic bag set in a shallow dish. Pour brine over meat; seal bag. Continue as directed in chart, to marinate and grill desired meat or poultry. Serve with pesto.
Whole chicken: rinse chicken inside and out. Marinate 6-8hr, turning occasionally. Place chicken, breast side up, on grill rack over drip pan. Cover and grill for 1 1/4-1 1/2hr.
Pork chops: Marinate for 4-6hr, turning occasionally. Grill 35-40min
Pork tenderloins: marinate 4-6hr, turning occasionally. Grill 30-35min.
