Ingredients
- 2 cups onions, diced
- 1/2 cup red pepper, diced
- 1/2 cup green pepper, diced
- 1 small jalapeño pepper, minced
- 1 cup chopped cilantro
- 2 cups frozen corn
- 1 cup vegetable oil
- 5 eggs
- 1 cup cheddar cheese, grated
- 1/2 cup brown sugar
- 1 cup cornmeal
- 1 cup flour
- 1 tsp salt
- 1 1/2 tbsp baking powder
- 1 tsp pepper
Preparation
Step 1
In a skillet, sauté onions and peppers until softened. Place in large mixing bowl and let cool a bit. Beat the eggs with the oil until well combined. Whisk together the flour, cornmeal, brown sugar, baking powder, salt and pepper. Add the egg and oil mixture along with the corn and cilantro to the cooked vegetables. Quickly fold in the dry ingredients and the cheese. Put batter in a greased 10 inch round cake pan or a 9x13 inch rectangular pan. Bake in a 350F oven for approximately 30 minutes or until golden and firm on top.
