Pepperoncini Calamari (St. Maartin Style)

the more lemon and pepperoncini taste the better.

Ingredients
- Ingredients:
- 1 pound of thick ringed calamari
- 1/2 cup butter
- 1 tablespoon garlic minced
- 1 pinch of thyme
- 1 pinch of black pepper
- 1 handful of sliced pepperoncini sliced
- 8 crumbled pieces of ritz crackers
- fish boulion to taste
- Garnish:
- parsley
- lemon wedges

Preparation
Step 1
Thaw and dry the calamari and set to the side.
Melt butter and add all ingredients to a simmer except Calamari.
Using a little butter fry calamari for approximately 2-3 mins. Don't over fry or the calamari will bet hard and chewy.
Once Calamari has been cooked, add butter pepperoncini sauce and simmer on low for 2 mins then serve hot with garnishes.
