Safeway style Cake

Got a sweet tooth? This cake is sure to satisfy! After researching online (mostly for that delicious "fluffy white" icing), I think I have come pretty close to imitating those dangerously sweet sheet cakes from Safeway with the 3:1 icing to cake ratio. :)

Ingredients

  • CAKE:
  • 1 cup butter (2 Sticks) room temperature
  • 2 cups sugar
  • 4 eggs, room temperature
  • 3 cups self rising flour, sifted (White Lily)
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract (Mc Cormick)
  • 1/2 teaspoon butter flavoring
  • ICING:
  • 1 cup high ratio shortening*
  • 2 teaspoon vanilla
  • 4 cups powdered sugar, sifted
  • 4 tablespoons milk

Preparation

Step 1

Preheat the oven to 350 degrees fahrenheit.

Grease and flour cake pan.

Cream butter until fluffy with a mixer. Add sugar and cream for another 7 minutes. Add eggs one egg at a time, beating well after each one. Add flour and milk (alternating to creamed mixture), beginning and ending with flour. Add vanilla and butter flavoring to mix; until just mixed.

Divide batter equally into three cake pans. Hold each layer about 3 inches above your counter and carefully drop the pans flat onto counter several times to ensure release of any air bubbles. This will help you have a more level cake.

Bake for 25 – 30 minutes (depending on your oven) until done. Cool in pans for 5 – 10 minutes.

Remove and immediately wrap each layer in plastic wrap to seal in moisture. Cool completely on wire racks.

ICING:

Beat together shortening and vanilla for 30 seconds on medium speed with an electric mixer.

Add 2 cups of powdered sugar a bit at a time while beating.

Add 2 tablespoons milk.

Slowly add in the rest of the powdered sugar and the rest of the milk until you get the right thickness

Frost and decorate to your liking! :)
