Ingredients

  • * A spoonful pineapple, ½ inch cubes
  • * A spoonful seedless watermelon, half inch cubes
  • * A few sprigs of fresh mint
  • 1 * 1 lime, quartered
  • * A dash of sugar cane syrup
  • 3 * 3 ounces white rum
  • 1/2 * 1/2 cup pineapple juice
  • * A dash of soda water
  • * ice cubes
  • * Garnish: lime wedges; mint sprigs

Directions

1. Cut watermelon flesh into small cubes and discard rind.
2. Peel pineapple, cut longways, remove core and cut pineapple into small cubes.
3. In a mortar, with your pestle, crush some fresh mint.
4. Add some of the pineapple, the melon and crush bit by bit. Cut lime, toss in and mash up a bit.
5. Then, in a cocktail shaker, add ½ cup ice cubes, place the pineapple/melon lime mixture, and add 2 shots of rum, a good dash of pineapple juice, a dash of sugar cane syrup.
6. Shake well. Serve in a hefty glass garnished with lime wedge and mint sprig
