Don't let the name fool you... this tasty cheesy appetizer has a spicy kicky with no fish or seafood in sight! Just lots of heat and vegis to wake your mouth up and make you a happy party goer! This is supposed to be made the night before you want to eat it for BEST flavor and Results. Plan Ahead! Thanks to my great friends who share their great recipes with me! This is a keeper!

Ingredients

  • 1 block Pepper Jack Cheese- Grated
  • 1 small can chopped black olives
  • 1 can petite diced tomatoes (I like Basil and Garlic flavored)- Drain & rinse slightly
  • 4 Chopped scallions/ green onions
  • Chopped cilantro (handful or to taste... if you don't like- use parsley)
  • 1/2 cup to 3/4 cup Olive Oil Vinaigrette (Wish Bone has a good one that we like the best)(enough to coat ingredients and make mixture firm, not soupy)
  • A few dashes of Franks Hot Pepper sauce or juice to taste, to add an extra spicy kick
  • Scoopable Frito's

Step 1

Mix ingredients and let refrigerate overnight, for best results. If you need to add a little more Olive Oil VInaigrette, go ahead, but remember, don't let it get soupy. It is supposed to be THICK.

Serve with Scoopable Frito's.
