Ingredients
- 3 Tbsp. Butter
- 1/4 cup finely chopped onion or shallot
- 1 Tbsp. finely chopped, drained sun-dried tomatoes packed in oil
- 1 tsp. finely chopped fresh thyme leaves
- 1/4 tsp. salt
- Pinch ground white pepper
- 2 cans (14-1/2 oz. ea.) whole new potatoes, drained and thinly sliced

Step 1
1.Melt butter in 12-inch nonstick skillet over medium-high heat and cook onion, stirring occasionally, 2 minutes or until onion is tender. Stir in sun-dried tomatoes, thyme, salt and pepper. Stir in potatoes, tossing to coat. Cook over medium heat, stirring occasionally, 25 minutes or until potatoes are golden brown. Remember, potatoes are cooked!(Potatoes will begin to stick and break apart.)
