  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 1/2 teaspoons cumin, ground
  • 1 1/2 teaspoons coriander, ground
  • 2 teaspoons guajillo peppers, ground
  • Ribs
  • 4 pounds bison short ribs, trimmed
  • 2 tablespoons Spice Rub
  • 2 cups red onion, finely chopped
  • 1/4 cup garlic, minced
  • 2 cups low-salt beef broth
  • 1 cup dry red wine
  • 3/4 cup balsamic vinegar
  • 1/3 cup packed brown sugar
  • 2 cups plum tomatoes, chopped

Preparation

Step 1

Directions
Spice Rub
Mix all ingredients together.
Ribs
Preheat oven to 300 degrees Fahrenheit.
To prepare ribs, heat a large Dutch oven coated with cooking oil over medium-high heat.
Sprinkle ribs with spice rub.
Add half of ribs to pan and cook for eight minutes or until browned, turning occasionally.
Remove ribs from pan and repeat procedure with remaining ribs.
Remove ribs from pan.
Add onions to Dutch oven and sauté for eight minutes or until lightly browned.
Add garlic and sauté for one minute. Return ribs to pan.
Add broth, wine, vinegar, sugar, and tomato. Bring to a simmer.
Cover and bake for approximately 2 to 3 hours or until tender.
