Ingredients
- 10 oz. extra wide egg noodle, cooked al dente in salt water and drained
- 4 # sweet onions
- 4 T. canola oil
- 12 eggs
- 1 c. butter
- kosher salt and fresh ground pepper, to taste
Preparation
Step 1
Preheat oven to 350.
Spray a 9 X 13 baking dish with non stick spray and set aside.
Chop up the onions.
Heat up the canola oil in a large saute pan.
Cook the onions in the saute pan, over medium heat, stirring occasionally, until onions are golden brown. This could take up to 40 minutes.
In a large bowl combine all of the ingredients (the butter will melt easily if it is stirred into the noodles while they are still hot). Mix well. Pour into the prepared pan.
Bake for 45 - 60 minutes, until the top is golden brown.
