Oven Fried Fish (L.F.)

Ingredients
- 1 lb fish fillets (sole, flounder, perch or catfish)
- 1 C cracker crumbs made from whole wheat crackers
- 1 t each garlic powder, herb blend, and Italian seasoning Fresh ground pepper and salt to taste
- 1 T Parmesan cheese
- 1/2 C skim milk
- Nonstick cooking spray

Step 1
Preheat oven to 425°.
Roll crackers into fine crumbs
between two layers of waxed
paper. Or, place crackers into a food processor and process for 1 minute until you have fine crumbs. Add seasoning and cheese. Mix well. Pour milk into shallow pan. Soak fish in milk for 5 min., then roll in crumbs. Arrange fish on baking sheet sprayed with nonstick cook¬ing spray. Spray nonstick spray onto fish. Bake for 10-15 minutes until fish is tender.
