Ingredients
- 2 med eggplant, peeled and cubed
- 1 lb ground beef
- 2 med onion, chopped
- 4 cloves garlic, minced
- 2 lg potatoes, cubed
- 1 can tomatoes
- 2 c. water
- 1/2 tsp nutmeg
- 1 tsp cumin
- 1 tsp ground fennel
- salt & pepper -- to taste
Preparation
Step 1
In saucepan, brown the meat. Add onions and garlic and saute until the onions are translucent. Add eggplant, potatoes, tomatoes, water, and spices.Bring to a boil, reduce heat and simmer for 45 minutes. Serve with rice
