Tuscan Pork Tenderloin

- 1 package Long Grain & Wild Rice
- 1 pound pork tenderloin
- 1/2 cup kidney beans, rinsed and drained
- 6 ears baby corn, cut in half
- 1/2 cup carrots, sliced
- 1/2 cup green zucchini, sliced and quartered
- 1/2 cup yellow squash, sliced and cut in half
- 3/4 cup cherry tomatoes, quartered

Step 1
1. Prepare pork loin according to producer's instructions.
2. Cook rice according to package instructions. When rice has been simmering for 15 minutes, stir in kidney beans, baby corn, carrots, green zucchini and yellow squash. Continue to simmer until liquid has evaporated, about
