Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1/4 cup diced cucumber
  • 1/4 cup tomato, peeled, seeded and diced
  • 3 coarsely chopped orange segments
  • 2 tablespoons chopped celery
  • 2 tablespoons Citrus Cilantro Dressing (see recipe below)
  • Fresh cilantro leaves for garnish
  • Citrus Cilanto Dressing
  • 1 tablespoon fresh orange juice
  • 1/2 tablespoon water
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon whole grain mustard
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon grated orange zest
  • 1/4 teaspoon chopped cilantro
  • 1/4 teaspoon olive oil

Preparation

Step 1

1. Rinse and drain the quinoa in a fine-mesh strainer under running tap water until the water runs clear.

2. Bring the water to a boil in a small saucepan. Add the quinoa and cook for 15 minutes over medium-low heat or until all the water is absorbed.

3. Meanwhile, in a medium bowl, combine the cucumber, tomato, orange segments, celery and dressing. Add the quinoa and toss to mix. Refrigerate until cold. Garnish with cilantro leaves and serve chilled.

Dressing
Combine all ingredients in a small bowl. Whisk or shake until mixed. Use immediately or refrigerate for up to 1 week.
