Ingredients
- 1/2 cup salad oil
- 4 medium onions, diced
- 4 garlic cloves, minced
- 16 lbs tomatoes, peeled and diced
- 2 12 oz can tomato paste
- 1/4 cup sugar
- 1/4 cup chopped parsley or 2 tbsp parsley flakes
- 2 tbsp oregano leaves
- 2 tbsp salt
- 2 tsp basil
- 3/4 tsp pepper
- 2 bay leaves

Step 1
In 12 quart dutch oven over medium heat, cook onions and garlic in oil until tender. Stir frequently. Add tomatoes and remaining ingredients. Over high heat, heat to boiling. Reduce heat, partially cover and cook 2 hours. Discard bay leaves. Pour into containers and freeze. Makes about 10 pints.
