Ingredients
- 3 cups flour
- 1 cup yellow corn meal
- 1/4 cup sugar
- 2 tablespoons baking powder
- 2 teaspoons salt
- 2 cups milk
- 3 eggs, lightly beaten
- 2 sticks melted butter
- 8 oz extra sharp cheddar cheese, grated
- 1/3 cups scallions (3 scallions)
- 3 tablespoons seeded minced jalepeno pepper
- 3/4 cups corn
- 1 red or green pepper, minced

Step 1
Preheat oven 350*
Grease 9 x 13 pan
Combine flour, cornmeal, sugar, baking powder and salt.
In another bowl, combine milk, eggs, and butter.
Stir wet ingredients into dry ingredients until lumps are gone. Do not overmix. Mix in 2 cups cheddar and scallions, corn, pepper, and jalepenos and allow to sit at room temperature for 20 minutes. Pour batter into pan. Sprinkle with more cheddar and extra chopped scallions. Bake 30 to 35 minutes.
