  • 1/2 cup butter or margarine
  • 1 1/2 cup sugar
  • 4 egg whites
  • 2 1/3 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp grated orange rind
  • 1/4 tsp baking soda
  • 3/4 cup cold water
  • 1/4 cup orange juice
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 1 Tbsp grated orange rind
  • 1 1/2 cups orange juice
  • 1/2 cup water
  • 4 slightly beaten egg yolks
  • 2 Tbsp butter
  • Whipped cream

Step 1

Cake: Cream butter and sugar. Add egg whites, one at a time. Add the rest of the cake ingredients, alternating the dry and wet. Line 2 8" round cake pans with wax paper. Fill pans and bake at 375° F for 25 - 30 min. Cool 10 minutes. Remove from pans.

Filling: Combine sugar, cornstarch, salt and orange rind in saucepan. Add the rest of the ingredients except butter and cook over medium heat, stirring constantly, until it thickens and boils. Remove from heat. Add butter.

After completely cool, split each cake layer crosswise. Stack layers, spreading about 3/4 cup filling between each layer and on top. Sprinkle top with coconut. Spread whipped cream on side of cake. Chill until served.
