Blueberry Poundcake

Ingredients

  • GLAZE:
  • 2 c. sugar
  • 1/2 c. light butter
  • 1/2 of 8oz. cream cheese
  • 4 Lg. Eggs
  • 3 c. flour
  • 2 c. fresh/frozen blueberries
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 8oz. carton lemon low-fat yogurt
  • 2 tsp. vanilla extract
  • cooking spray
  • 1/2 c. 10x sugar
  • 4 tsp. lemon juice
  • OR:
  • Store bought vanilla icing

Preparation

Step 1

Preheat oven to 350 degrees
1. beat sugar, butter and cream cheese
2. add eggs one at a time
3. toss blueberries w/ 2 TB flour set aside
4. add flour and alt. w/ yogurt; end w/ flour
5. fold in blueberries and vanilla. Bake in tube pan for 1 hr. 10 mins or til pick comes out clean.
