Ingredients

  • 3 cups sugar
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup buttermilk
  • ¾ cup light corn syrup (white)
  • 2 tablespoons butter or margarine
  • 2 cups pecan pieces

Step 1

Butter the sides of a large, heavy sauce-
pan or Dutch oven. This keeps sugar
from clinging to side of pan. Combine
sugar, baking soda and salt in that pan.
Stir in buttermilk and corn syrup.
Bring to boiling over medium heat,
stirring constantly. Cook and stir to
soft-ball stage (234 degrees on a candy
thermometer).

Remove from heat and add butter or
margarine. Stir in pecans; beat till
mixture is thick enough to drop from
spoon, 5 to 6 minutes. Mixture will
begin to turn creamy. Quickly drop
from tablespoon onto waxed paper.

If candy becomes too stiff, add 1 tea-
spoon of hot water at a time, mixing
until of the right consistency to drop.

Makes about 45 pralines.
