Ingredients

  • 22 Pound Turkey
  • 2 1/2 Gallons of Water
  • 1 1/2 Cups of Kosher Salt
  • 1 Cup of Sugar
  • 1/2 Cup of Butter
  • 3 Cloves of Minced Garlic
  • 1 Tablespoon of Paprika
  • 1 Tablespoon of Parsley
  • 1 Sprig of Fresh Thyme

Preparation

Step 1

1.) In a mixing bowl; combine 2 1/2 gallons of water, 1 1/2 cups of kosher salt, 1 cup of sugar, 3 cloves of minced garlic, and 1 sprig of fresh thyme.
2.) Place turkey in a fragrance free trash bag.
3.) Pour the brine over the turkey.
4.) Allow the turkey to soak overnight.
5.) In the morning, use paper towels to pat the turkey dry.
6.) Preheat oven to 325 degrees.
7.) Firmly position the "V" rack in the turkey pan and place the turkey upon the "V" rack.
8.) Brush turkey with butter.
9.) Seasoning turkey with 1 tablespoon of parsley and 1 tablespoon of paprika.
10.) Cover turkey with foil and place in oven.
11.) Bake for 5 and a 1/2 hours.
