This cake is a single layer cake. I use this cake all the time for when someone really wants the "I'll have anything really chocolate" dessert.

Ingredients

  • Cake:
  • 1 stick room temp butter
  • 1 cup sugar
  • 4 extra large eggs room temp
  • 1 can of Hersheys chocolate syrup or 1 1/2 cups plus 2 tablespoon bottle syrup
  • 1 tablespoon vanilla
  • 1 cup flour
  • Chocolate Ganache:
  • 1/2 cup heavy cream
  • 8 ounces good semisweet chocolate chips
  • 1 teaspoon instant coffee granules

Preparation

Step 1

Preheat oven to 325*
Butter and flour an 8" round cake pan, then line the bottom with parchment paper

Cream the butter and sugar until light and fluffy. Add the eggs, one at a time. Mix in the chocolate syrup and vanilla. Add the flour and mix until just combined. Don't overbeat, or the cake will turn tough.

Pour the batter into the pan and bake 40 to 45 minutes.

Ganache:

Cook the heavy cream, chocolate chips and instant coffee in the top of a double broiler over simmering water until smooth and warm, stirring constantly. Pour over cake.
